Quick and Easy Dinner Rolls

I have a confession to make.  I used to be afraid of yeast.  I wouldn't use it. EVER.  I was afraid of screwing things up so I never dove in. I finally had my mom come and walk me through baking bread (even though she had done it before) so I would know exactly what to do.  I haven't screwed up a recipe with yeast yet.  These rolls are so easy.  They are super fast.  They are perfect with soup.  I like them with just a slice of cheese on them for lunch.  They have a LOT of yeast in them.  That is what makes them fast.  Because of this, they are a denser bread, where many rolls are light and fluffy. This is completely fine with me as I prefer dense bread. 

1/4 c milk
2 T sugar
1/2 T butter
3 1/2 t dry active yeast
3/4 c warm water
2 1/2 c flour
1 t salt

Combine milk, sugar and butter in a small saucepan.  Heat until butter is just melted and sugar is dissolved. Pour into mixer bowl. Let cool for five minutes. Add warm water and yeast. 
Let sit for 5-10 minutes while yeast blooms.
Add salt and 2 c flour.
Using dough hook, knead your dough for 5 minutes, adding additional 1 c of flour after about a minute.
Place dough into greased bowl, cover and allow to raise for 15 minutes.
Separate dough into 9 rolls, rolling in both hands to form a ball.  They will be a little bigger than a golf ball, but smaller than a baseball.
Cover and allow to raise for 15 mins.
Bake on 400 for 15 mins.
Brush melted butter on top.
Try not to eat them all in one sitting.

Notes:
1. I usually double this recipe since we use them for sandwiches. 
2. I find that a single batch fits perfectly in a square pan.
