These muffins are a favorite at our house. They are almost cake-like and sweet. They are good plain, or with butter and honey or jam. They make up super fast - and go fast, too!
Brown Sugar Muffins
1/2 cup butter
1 cup brown sugar
1 egg
1 t vanilla
2 cups flour
1 t baking soda
1/4 t salt
1 cup milk
Preheat oven to 375*.
Spray a muffin tin or use liners.
Beat softened butter until smooth.
Beat in brown sugar until well combined.
Beat in egg and vanilla
Combine flour, baking soda and salt and then stir into batter.
Beat in milk until just combined.
Fill cups about 2/3 full.
Bake for 15 mins, until lightly browned.
Notes:
1. If you don't have soft butter - don't worry! Place a cube of butter in the microwave and cook on EACH side for 4 seconds. You will have perfectly soft butter. (Don't allow it to melt!)
2. I use a 1 T cookie scoop to fill the cups. I place one heaping scoop in each. I was able to make 24 muffins.
3. I highly recommend getting a 24-cup muffin tin. Life. Changing.
4. I do not use cheap liners. They make your muffins (or cupcakes) overbrown on the bottom. I always get name brand ones or even cute character ones for fun. My muffins are currently baking in Paw Patrol muffin liners. :)
5. Don't overmix or your muffins will fall and/or be dry.
