2 lbs ground beef (or meat of preference)
32 oz frozen cubed potatoes
1 cup minced onions
2 cans cheddar cheese soup
2 cups shredded cheddar cheese
Preheat oven to 350
Grease 9x13 pan
Brown meat with onions
Drain fat
Stir in potatoes, soup, and 1 cup shredded cheese
Spread in prepared pan
Sprinkle remaining cheese on top
Cover with foil
Bake 1 hour
Notes:
- The original recipe called for 1 can of cheddar cheese soup and 1 can of cream of mushroom. I do not eat mushrooms. Haha! If you are a mushroom fan, try it!
- The original recipe also suggests removing the foil for half the cooking time. I did not do this because I don't like "crispy" cheese. You do you!
-For breakfast casserole, use sausage and add 7 eggs lightly beaten with 1/2 cup milk and omit the cheddar cheese soup. Try Potatoes O'Brien instead of plain potatoes.
