Potato Salad

Potato Salad

I love me some potato salad.  Especially if it contains mustard and pickles and onions. I could eat it all day.  Potato salad also remains the only way I will eat boiled eggs.  There was a little, shall we say, "incident" when I was pregnant with Katie and they have been permanently OFF of my list. Give this one a try. It is pretty dang good!

Ingredients:
4 1/2 pounds (or approx 12 cups) diced potatoes
6 hard-boiled eggs
1 c minced dill pickles
1 c minced celery
3/4 c minced onion
1 1/2 cups mayonnaise
3 T dijon mustard
2 T pickle juice
1 1/2 t salt
3/4 t pepper

Place potatoes in water and bring to a boil. Boil 10-15 mins until "al dent." Not crunchy, but soft enough to pierce with a fork. Don't overcook.
Boil eggs.
Mix together mayo, mustard, pickle juice, salt and pepper and set aside.

When eggs and potatoes have cooled enough to comfortably handle, peel eggs. Smash yolks and add to dressing mixture. Dice the whites and set aside.

Combine potatoes, egg whites, pickles, celery and onions. Pour dressing over the veggies and stir to combine. I prefer to "fold" this salad so I don't smash the potatoes. (This is where not overcooking comes in handy!)

Chill 4 hours or overnight so that the flavors combine and soak into the potatoes.

Notes:
-Since the size of potatoes varies greatly depending on where you live I have listed them in pounds or cups. I live in Idaho and I work in the potato industry.  We get a lot of free potatoes and many of them are HUGE!
-When you boil your potatoes, salt the water liberally.  And when I say "liberally" I mean add what you think is a lot of salt.  And then double it. It takes a ton of salt to get potatoes flavored. 
-I usually use yellow onions, but I personally have no reason for that.  White or red would be equally yummy.  I have never met an onion I didn't like.
-I am EXTREMELY picky about my pickles, probably because if I have the "right" pickles I would gladly eat my body weight in them. I exclusively use the Claussen brand. They can be found at all major grocery stores (Wal-Mart, Albertson's and Fred Meyer for sure!) in the fridge. However, you do what you prefer.
